Metz Culinary Management is Hiring an Operations Manager (DM) Near Burlington, NJ

Job Summary:

The Operations Manager/Area Supervisor oversees the operations at assigned region. She/he facilitates smooth operations of food service contract administration, operational policies, customer service and project coordination. She/he travels within assigned region to support, train and monitor the Food Service Directors in day to day operations such as budget management, staffing, ordering and customer service.

Scope of Responsibility:

Operations Managers/Area Supervisors supervise the work of Food Service Directors.

Operations Managers support the work of Area Supervisors.

Essential Duties and Responsibilities:

  • Coordinates operational activities to prepare for the opening of schools each year in assigned region.
  • Develops annual budgets and staffing guidelines.
  • Ensures that all schools are fully staffed; participates in hiring Food Service Directors.
  • Supports, trains and monitors the work of Food Service Directors in assigned area.
  • Conducts lunch walkthroughs to ensure that everything is running smoothly. Makes suggestions and offers training where needed. Follows up to ensure compliance,
  • Ensures that all operational guidelines are met and maintained in each district.
  • Trains and supports Food Service Directors in weekly and monthly report preparation and effective use of point of sale system.
  • Rewards and recognizes accomplishments that meet and exceed guidelines.
  • Communicates with Food Service Directors via visit or phone at a minimum of every two weeks.
  • Advises Food Service Directors in the management and direction of all aspects of the food service operations production.
  • Maintains quality assurance programs in compliance with federal, state, local, Board of Health, HACCP food service requirements, and NSFM policies.
  • Answers questions and resolves problems as needed.
  • Completes managerial duties in the supervision of assigned Food Service Directors, Assistant Food Service Directors and Bookkeepers.
  • Manages employees in accordance with the Company’s policies and practices while fostering a positive approach to the Company’s goals to build the strongest, most effective team for each school district.
  • Ensures all work is completed in a timely and accurate manner.
  • Makes self available to staff, communicates to staff openly and regularly, resolves outstanding employee relations issues or other problems; works to maintain positive morale.
  • Provides regular verbal and written performance feedback in a timely manner; develops subordinates’ skills and encourages growth to facilitate career progression.
  • Recruits Food Service Directors and Area Supervisors.
  • Establishes financial goals for Food Service Directors and interprets monthly financials; ensures that staff meets objectives and budget requirements throughout the year.
  • Monitors reports to ensure that districts are meeting stated budget targets. Resolves problems as needed. 
  • Reviews financial reports and explains information to School Administration as needed.
  • Ensures the completion of successful annual School Food Service audits, ensuring all deadlines are met.
  • Develops annual budgets; prepares accurate budgets within the reach of goals of Food Service Directors and needs of District for current clients.
  • Participates in proposal writing and contract renewals each year with the goal of account retention and new sales growth.
  • Markets/represents Nutri-Serve at conventions/conferences.
  • Meets with Sales Representative during the RFP (Request for Proposal) process.
  • Participates in Walk-throughs.
  • Ensures contract renewals with current business.
  • Networks with Business Administrators and listens for new business opportunities.
  • Attends County ASBO meetings as directed.
  • Prepares proposals and budgets.
  • Completes sales and brings in new business for Nutri-Serve whenever possible.
  • Meets and follow up with potential new clients and help attain new business.
  • Delivers exceptional customer service to ensure positive relationships with all customers and internal staff.
  • Solicits and manages customer needs, expectations, and demands through open client communications.
  • Develops and maintains effective business relationships with internal Nutri-Serve employees and the school district, including superintendent, principal, administration, faculty, staff, parents and students with the goal of ensuring account retention
  • Meets with Business Administrator at least once each month. Communicates with BA on issues, concerns, needs for district.
  • Provides extraordinary customer service and creates open communication with the school district through the review of the Food Service Directors’ monthly school board updates and by seeking program feedback from administration, faculty, staff, parents and students.
  • Presents a professional image as a representative of the Company.
  • Develops and maintains open communication with NSFM corporate team members
  • Maintains good communications with Director of Operations, providing weekly updates each Monday morning and schedule planning by Friday afternoons.
  • Attends and contributes to monthly and corporate administrative meetings.
  • Develops menus and ensures food cost control, nutrition, and proper usage of commodities
  • Develops monthly menus a nd provide food services for special events; ensures District Menus are posted on NSFM Menu Grid monthly.
  • Reviews Inventory Pars to ensure they are accurate and in acceptable range for each district.
  • Ensures proper unit cost control, commodity usage, and proper implementation of USDA and NJDA regulations.
  • Develops, directs and monitors special projects and performs other duties as assigned.

Minimum Qualifications:

The job requires an Associates’ Degree in Food Service Management, nutrition or business plus four years of food service management experience OR a high school diploma or equivalent and at least 8 years food service experience, preferably at Nutri-Serve or a similar company in a school district setting, or an equivalent combination of education and experience.

All Operations Managers/Area Supervisors must meet the following requirements:

  • Must be able to pass the state-required background check and fingerprinting to work in NJ schools.
  • Must be Serve Safe Certified or be able to complete Serve-Safe Certification within one year of assuming the Operations Manager/Area Supervisor role.
  • Must have a valid, current driver’s license and be able to drive between schools in the district to oversee staff.
  • Must attend Bureau of Child Nutrition Program training each year.

Key knowledge, skills and abilities of this job include the following:

  • Strong knowledge of NSFM policies and procedures.
  • Working knowledge of point of sale system.
  • Knowledge of the New Jersey Child Nutrition Program.
  • Knowledge of the Microsoft Office suite of software (Word, Excel, Outlook).
  • Knowledge of purchasing procedures and inventory process and how they affect the budgeted bottom line.
  • Strong public speaking and interpersonal skills, along with a professional manner and appearance.
  • Strong management skills.
  • High energy and a positive approach.
  • Strong organizational and detail skills
  • Good problem solving skills.
  • Excellent listening skills
  • Ability to work with minimal supervision.

Physical Demands & Working Conditions:

Position requires daily travel within a designated region. While most of the day is spent guiding the Food Service Directors in the school district kitchens, the incumbent will sometimes be required to physically work in the kitchen to help out staff during busy periods. Therefore, an ability to stand for extended periods; twist, bend, and move freely; and lift up to 30 pounds is required.

While performing the duties of this job, the incumbent may be exposed to moving mechanical parts and extreme heat. She/he is occasionally exposed to wet and/or humid conditions and extreme cold. The noise level in the work environment is usually moderate.
